Ingredients: 4 ounces mushrooms, thinly sliced; 8 ounces extra dry tofu, drained and diced; 2 tablespoons vegetable oil; 1tablespoon soy sauce; 3 ounces proscuitto, diced or sliced thinly; 1 quart chicken broth, canned or fresh; 2 tablespoons soy sauce; 1/4 teaspoon cayenne pepper; 2 tablespoons cider vinegar; 2 tablespoons cornstarch mixed with 3 tablespoons cold water; 1 large egg, beaten lightly; 3 whole green onions, finely sliced

4 ounces mushrooms, thinly sliced

1tablespoon soy sauce
3 ounces proscuitto, diced or sliced thinly
1 quart chicken broth, canned or fresh
2 tablespoons soy sauce
1/4 teaspoon cayenne pepper
2 tablespoons cider vinegar
2 tablespoons cornstarch mixed with 3 tablespoons cold water
1 large egg, beaten lightly
3 whole green onions, finely sliced

Heat vegetable oil in a small skillet and add tofu, mushrooms, proscuitto and 1 tablespoon soy sauce. Saute until they begin to brown. Remove from heat and set aside. In a 3-quart saucepan combine the chicken broth, soy sauce, vinegar and cayenne pepper. Bring to a boil, reduce heat and simmer for about 3 minutes. Bring to gentle boil again and add tofu and mushroom mix. Stir cornstarch mix to recombine it and stir into boiling broth. When soup begins to thicken pour in the beaten egg while stirring the soup in a circle so the egg will cook in short streamers. Add the shrimp and green onions. Taste for seasoning, there should be a brisk peppery and pleasantly sour taste. If needed add a pinch of cayenne and a little vinegar. If salt is needed, add a bit more soy sauce. Serve with crispy noodles.
