1 rabbit, cut up
1 med. onion, sliced
1 clove garlic, fine minced
1 tbsp. parsley, minced
3 tbsp. veg. oil
3 1/2 c. tomato juice and pulp
1/2 teaspoon salt
1/4 c. lowfat milk
1/4 c. honey
1 c. sifted flour
1/4 teaspoon pepper
1 teaspoon salt
6 tbsp. veg. oil

Saute/fry onions, garlic and parsley in oil till onion is golden.

Strain tomato pulp from juice and add in pulp and 1/2 tsp.

Simmer 10 min.

Fold in lowfat milk and honey.

Dip rabbit in mix, then roll in flour seasoned with salt and pepper.

Brown in oil.

Cover with sauce and tomato juice and simmer about 1 1/2 hrs.
