Honey Tea Cakes (Friands)

   Pre-heat the oven to 175C.

   Grease a muffin pan.

   Sift the sugar and flour into a large bowl. Add the almond flour.

   Whisk the egg whites until firm and gently fold into the flour mixture, a little at a time.

   Add the melted butter and 2 heaped tablespoons of honey. Mix all the ingredients together gently.

   Fill the muffin molds with the mixture up to half full.

   Cook for 10-12 minutes or until the centers are firm to the touch.

   To serve, sprinkle with pumpkin seeds and a spoonful of honey.
