Preheat the oven to 450u00b0F. Place beef in a roasting pan. Brush all over with half the mustard. Roast for 35 mins, or until cooked to desired doneness. Remove from oven. Let stand, loosely covered with foil, 5 mins.

Meanwhile, for the macadamia rice, melt butter in a medium saucepan on medium heat. Cook onion, garlic and mustard seeds until onion has softened. Add rice and continue stirring for 1 min. Stir in stock and 1/2 cup water; bring to a boil. Reduce heat to low; simmer, covered, for 25 mins, or until rice is just tender. Remove from heat. Fluff with fork. Stir in parsley and nuts.

Heat cream and remaining mustard in a small saucepan. Drizzle over beef. Serve with macadamia rice.
