Hominy-Cheese Casserole

   Combine butter and flour; cook over slow heat.

   Stir until smooth.

   Slowly add milk, stirring constantly, until mixture begins to thicken.

   Add onion, salt, chili powder and pepper; mix well.

   Wash hominy and drain; stir into sauce.

   Pour mixture into greased 1-quart casserole dish.

   Sprinkle with cheese and bake at 325u00b0 for 40 minutes or until hot and bubbly.
