Mix flour, eggs and salt in a mixer until well blended.

Add seltzer water and mix on medium high speed for approximately 4 minutes or until small bubbles form in the batter at rest (note: my mother-in-law will only mix this by hand using a whisk, but I like using the electric mixer and do not see any real difference in the quality of the noodle).

Scoop batter into a potato ricer and press into boiling water.

Noodles cook very quickly (approximately 1-2 minutes) and are done when they float to the top of the water.

Noodles are best cooked in small batches so they do not stick.

Place cooked noodles in a 9x13 dish and top with a mixture of buttered bread crumbs (1 stick butter melted with bread crumbs added).

Serve with your favorite gravy and main dish.
