Homemade Enchilada Sauce

   1. In a saucepan, heat the oil and mix in the flour. Stir until smooth and combined, about 1 minute.

   2. Add chili powder. Stir to combine. Let sit for 30 seconds.

   3. Add stock, tomato paste, cumin, and salt. Combine. Bring to a low boil, then reduce heat and let cook for 15 minutes to reduce and thicken. Adust seasonings to taste.
