Homemade Bacon Blue Cheese Tator Tots

   Preheat oven to 400 degrees F.

   Cook bacon for 10 minutes until crisp.

   Let cool and then chop.

   Peel potatoes and add to a pot of water.

   Parboil for 67 minutes.

   Drain, let dry, and cool potatoes before shredding finely with a cheese grater.

   Mix flour, salt, pepper, chopped garlic and chopped bacon with the potato mixture.

   Assemble mixture into large tots and stuff each tot with 1 teaspoon blue cheese.

   Heat oil in a fry pot to 350 degrees F. Fry each tot for 34 minutes until golden brown and crispy on the outside.
