Cut round sides off of potatos, making it box-like, easy for making the french-fry cut

Start to boil the fries after cutting, starting with cold water

Preheat oven to 350

In another small sauce pan( or microwave, if you prefer) melt butter down with a pinch of salt and what ever else spices you prefer

Once fries come to just about cooked, strain, place in a bowl, toss with the melted butter and arrange uniformly on baking sheet

Bake continuously, checking periodically

Chop green onions for garnish and set aside.

Dice yellow onion and carmelize in pan with olive oil.

Chop parsley to toss finished fries in

Mix together mayonnaise, ketchup & relish.

You may like the sauce differently-- so make it to taste :) place in fridge to chill

Take fries from oven and toss in bowl with cbopped parsley.

Transfer fries onto oven-safe plate and top with sliced cheddar.

Place fries back in the oven to melt the cheese, for only a few minutes.

(Sometimes, i will put the sauce followed by the carmelized onion on top for the melt)

Remove from oven, top with sauce and carmelized onion.

Garnish with chopped green onion
