Herbed Baked Chicken

   Heat oven to 450 F. In a glass casserole dish, lay washed chicken thighs skin side up.

   Brush liberally with olive oil and sprinkle on kosher salt to taste.

   In a mortar and pestle, grind up herbs and peppercorns until fine.

   Sprinkle herbs and pepper mixture on chicken.

   Bake until thermometer reads 165F when inserted into the meatiest part of the chicken or approx.

   45-60 minutes.
