Ingredients: ¼ cup butter; 2 garlic cloves, chopped; 2 lemons, zest of; 2 cups fresh breadcrumbs; ½ teaspoon salt; 1 cup cream; ¼ cup fresh lemon juice; 500 g fettuccine; 500 g tomatoes, seeded and chopped; 1 (8 ounce) can tuna; ½ cup parmesan cheese, grated; ½ teaspoon pepper

¼ cup butter
2 garlic cloves, chopped

2 cups fresh breadcrumbs
½ teaspoon salt
1 cup cream
¼ cup fresh lemon juice
500 g fettuccine
500 g tomatoes, seeded and chopped
1 (8 ounce) can tuna
½ cup parmesan cheese, grated
½ teaspoon pepper

Melt butter and add garlic, cook for several seconds.

add 1/2 the lemon zest and all the breadcrumbs and cook, stirring constantly over medium heat till golden and crisp.

remove from heat and add salt.

transfer to a plate.

wipe pan clean.

combine cream, remaining lemon zest, and lemon juice in pan.

bring to the boil and simmer for 3 minutes or until slightly thickened.

cook pasta and drain.

add cooked pasta to the sauce and warm through.

add tomatoes, tuna, parmesan cheese, parsley and pepper to taste.
