Finely chop most of the ham and coarsely chop the remaining. Beat the eggs and milk in a large bowl. Stir in the chopped parsley and season with salt and freshly ground black pepper.

Heat 1 tbsp of the oil in a small nonstick skillet on medium heat. Add one-quarter of the egg mixture. Cook gently for 2-3 mins, drawing the uncooked egg towards the center of the pan with a fork. Top with a quarter of the finely chopped ham, diced tomatoes and mozzarella; cook for a further few mins until the egg is just set. Fold omelet in half and transfer to plate; cover to keep warm.

Repeat to make 3 additional omelets. Top the omelets with the coarsely chopped ham. Garnish with tomato wedges and parsley sprigs.
