Combine the flour, salt and egg in a large bowl. Slowly whisk in 2 cups water. The batter should be the consistency of light cream. If it's too thick add more water until the right consistency.

Heat a 12-inch nonstick skillet on medium-high heat. Melt 2 tsp butter in pan. Pour 1/2 cup batter into the pan and quickly swirl around so it coats pan thinly and evenly.

Cook for 2 mins, or until bottom is slightly brown. Flip over and cook the other side for 1 min. Repeat with remaining mixture. Pile galettes on a warm plate.

Add remaining 1 tbsp butter and the spinach leaves to pan. Cook, stirring, until just wilted. Transfer to a bowl. Wipe pan clean.

Return one galette to pan. Sprinkle 1/4 of the cheese over the surface of the galette and when it has melted add a slice of ham and 1/4 of the spinach. Fold edges over filling. Repeat with remaining galettes.
