Halloween! Rich Cream Cheese Truffle Ghosties

   Put the chocolate covered cookies in a plastic bag, and crush them with a rolling pin.

   Add the softened cream cheese to the crushed cookies, and mix evenly.

   Divide into 10 portions and form into ghost shapes.

   Chill until firm in the refrigerator, about 30 to 60 minutes.

   Chop up the white chocolate and melt in a double boiler.

   Pierce through the bottoms of the chilled cheese-cookie balls from Step 4 with a bamboo skewer, and dip in the white chocolate.

   Shake off any excess.

   Stick another skewer through the side, and push up slowly from the bottom to remove the first skewer...

    Place the dipped ball on a tray and remove the side skewer.

    Since the filling is chilled, the chocolate will harden right away and you can work fast.

    Using a decorating chocolate pen or a small amount of melted chocolate in a decorating bag, put ghost faces on the balls to finish.

    Chill in the refrigerator until you're ready to serve.
