Ingredients: 1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up; 3 tbsp. veg. oil; 1 pound beef stew meat, cut into 1 inch pcs; 2 med. onions, minced; 1 med. green pepper, minced; 1 (28 ounce.) can tomatoes, cut up; 1 teaspoon salt; 1 to 2 teaspoon grnd red pepper; 3/4 c. peanut butter; Mashed sweet potatoes or possibly warm cooked rice

1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
3 tbsp. veg. oil
1 pound beef stew meat, cut into 1 inch pcs
2 med. onions, minced
1 med. green pepper, minced
1 (28 ounce.) can tomatoes, cut up
1 teaspoon salt
1 to 2 teaspoon grnd red pepper
3/4 c. peanut butter
Mashed sweet potatoes or possibly warm cooked rice

In a large saucepan or possibly Dutch oven, brown chicken pcs in warm oil about 15 min; remove from pan.

Set aside, reserving drippings.

Add in beef, onion and green pepper to drippings; cook till beef is brown and onion is tender.

Drain off fat.

Stir in undrained tomatoes, salt and red pepper.

Bring to boiling; reduce heat.

Cover; simmer 30 min.

Add in chicken pcs; simmer 20 min more.

In small saucepan heat peanut butter over low heat.

Stir into chicken mix.

Return mix to boiling; reduce heat.

Cover; simmer 20 min more.

Skim off fat.

Serve with mashed sweet potatoes or possibly warm cooked rice.
