1 md. white onion, peeled and chopped
Salt and pepper, to taste
2 cups cored and chopped fresh tomatoes
1/2 cup water
2 dried chipotle chillies, to taste
1/4 cup chopped fresh cilantro
4 bone-in pork loin chops
Chopped fresh cilantro, for garnish
4 lime wedges

Heat oil in a saucepan at medium heat.

Add onion, salt and pepper, stirring occasionally; cook until onions begin to brown at the edges.

Add the chilies, tomatoes and water and simmer for 15 minutes.

Preheat the grill to medium-hot.

Taste and season sauce.

Remove stems from chipotles (the hot part).

Place sauce in a blender and puree.
