1 tsp sugar
1 tsp cinnamon
4 large chicken breast
1 large red bell pepper
1/2 cup green onions
4 cup corn (preferably fresh but frozen works)
1 large tomato

preheat oven to 375F

combine all spices and rub on chicken

heat oil in a oven proof skillet on medium heat and cook chicken 5 minutes per side

remove chicken from pan

combine green onions,corn,tomato, and bell pepper in the same pan.

Cover and bake for 15 minutes

after the 15 minutes, remove cover, add chicken and bake uncovered for another 15 minutes or longer depending on the thickness of the chicken breast.
