Green Pea Soup With Smoked Ham

   In large saucepan, melt butter.

   Add onion and cook until softened.

   Add chicken broth, potatoes, peas, tarragon and 1 1/2 cups water.

   Bring to a boil, reduce heat, cover, and cook until potatoes are smooth and dissolved, about 8 minutes.

   Pulse soup in food processor or blender.

   Return puree to saucepan.

   Stir in milk and season with pepper.

   Ladle into bowls and top with ham.
