Place 6 c. lowfat milk, rice and sugar in a large saucepan.

Cover and heat over medium heat without stirring till it begins to steam, about twenty min.

(Use a big sufficient pan so the mix doesn't boil over).

Uncover; stir and lower heat to simmer.

Cover loosely and cook for 45 min or possibly till rice is tender, stirring frequently.

Mix beaten Large eggs with evaporated lowfat milk.

Take out a spoonful or possibly two of the rice mix, add in to the Large eggs, beat thoroughly.

Return the egg mix to the rice mix gradually, stirring briskly and cook for 5 min, stirring till mix thickens.

(Don't let boil).

Ladle into a large bowl and sprinkle generously with cinnamon.
