Preheat the oven to 325 degrees.

Mix the honey, syrup and vanilla in a small bowl. Mix the oats, spices, and sugar in a large bowl.

Pour honey mixture over the oats and mix until well coated. Spread the oats on a large baking sheet. Bake for 30-60 minutes, stirring every 10 minutes. Oats should be golden brown when they're finished, but the size of your baking sheet (and how deep they are on it) will vary the time some.

Set the sheet on a wire rack to cool. Mix the dried fruit and the oats in a large, airtight container.
