Put water, sugar, syrup and half of the butter into a large saucepan, and bring to a rapid boil.

While heating the syrup mixture, rub the remaining butter into the flour, add in the egg and mix (either by hand or with a mixer) to form a scone-like dough. If the mixture is too firm or dry, mix in some milk, a few drops at a time, until the dough reaches desired (scone-like) consistency.

Once the syrup comes to the boil, form the dough into golf-ball sized balls, and drop them into the boiling syrup. Roll the balls over with a spoon every so often, to ensure they cook evenly on all sides. The dumplings will swell and the syrup will become slightly darker towards the end of cooking time. (Watch them regularly to ensure the mixture doesn't get too hot and burn!)

Cut a dumpling with the spoon to ensure it is nicely cooked through, not doughy or hard in the middle. When done, serve in bowls with the syrup spooned over the top. Drizzle with milk or cream, and snuggle down to enjoy this winter comfort food!
