1/2 c. Grape Nuts
1 1/2 c. sugar
2 teaspoon instant coffee
2 teaspoon cinnamon
1 3/4 c. flour
1 teaspoon soda
1/2 teaspoon baking pwdr
1/2 teaspoon salt
1 c. (1/2 pt.) lowfat sour cream
1/2 c. butter
1/2 teaspoon vanilla
2 Large eggs

Hint: Leave off soda, baking pwdr and salt if using self-rising flour and cake may be baked in bundt pan.

Mix cereal, 1/2 c. sugar, coffee and cinnamon (set aside).

Mix flour, 1 c. sugar, soda, baking pwdr and salt in large mixer bowl.

Add in lowfat sour cream, Large eggs, butter and vanilla.

Blend on low speed of mixer then 1 minute on medium.

Spread 1/2 batter in greased 8 inch square pan.

Sprinkle with half cereal mix, another third of batter, rest of cereal mix, then remainder of batter.

Bake at 350 degrees 45 to 50 min.
