Preheat oven to 350 F. Line 2 baking trays with a Silpat mat or parchment paper. Set aside.

In a medium bowl, mix together the oats, flour, apple pie spice, salt and baking soda. Set aside.

In a large bowl, cream together the butter and brown sugar with a hand mixer until fluffy. Beat in egg, 1/4 cup milk and vanilla. Gently fold in apples and oat mixture until combined.

Drop spoonfuls onto the prepared baking trays spacing them two inches apart.

Bake for 15-18 minutes, or until golden brown. Remove from oven and let cookies cool for 5 minutes, then move cookies to wire racks to cool completely.

While cookies are cooling, prepare glaze. In a small bowl, whisk together the confectioners' sugar and remaining 2 tablespoons milk. Drizzle over the cooled cookies. Enjoy!
