Sift flour, ginger and baking soda together onto a sheet of parchment paper then fold into batter along with warm honey. Gently knead on a lightly floured work surface. Roll out to 1/4 inch thick. Cut out gingerbread men shapes using floured cutters. Place on prepared trays and bake for 10-15 mins. Let cool on trays.

Meanwhile, to make icing, whip egg white until frothy. Gradually add powdered sugar, beating well after each addition. Once icing reaches a pipeable consistency, mix in lemon juice. Decorate gingerbread cookies.
