Name: German Potato Salad
Yield: 4 servings
Ingredients: 5 lb. potatoes; 2 lb. bacon; 6 Tbsp. flour; 1/2 c. white vinegar; 3 1/2 c. water; 1 onion, diced; 1 Tbsp. parsley; 1 tsp. dill weed; salt and pepper; celery (if desired)

Boil potatoes; cool and slice.

Cut bacon into 1/2-inch pieces.

Fry slowly until brown.

Reserve 1/2 cup bacon grease; add flour.

Gradually stir in liquids.

Add onion, seasonings and potatoes.

Simmer for 10 minutes.

Add salt to taste.

Cover and let stand for 4 hours before serving.
