Place 4 cups of the juice in a large bowl. Stir in gelatin mixture until well combined. Pour into prepared pan. Refrigerate for 2 hours or until set.

Combine remaining 1/2 cup juice, honey and passionfruit in a small saucepan on medium heat. Bring to a boil. Reduce heat to low; simmer, uncovered, for 5 mins or until reduced to a quarter. Transfer to a small bowl; set aside to cool.

Using a melon baller, scoop honeydew, cantaloupe and watermelon into balls. Combine fruit in a large bowl; gently stir in cooled fruit syrup. Using a 2 inch star cookie cutter, cut out stars from gelatin. Spoon fruit into bowls and top with stars. Serve at once.
