Prepare a syrup by boiling the sugar, vanilla & water together.

Cut pears in half, peel & core. Poach pears in syrup until soft. Peel bananas, cut lengthwise and half again. oook in syrup a few minutes until soft but not mushy. Drain, chill fruit thoroughly.

Beat egg yolks & sugar to thick and light.Melt chocolate. Stir melted chocolate into egg mixture til smooth and well blended. Gradually add scalded milk. Place over low heat and stir gently til thickened. Do not boil. Add vanilla and chill about 2 hours. Place poached pear halves cut side down in circle on large platter with stem toward center. Spoon chocolate sauce over each pear half. Between pears place a banana section sprinkled with almonds.Refrigerate until serving. To serve place sweetened whipped cream flavored with rum in middle of plate. Top with nuts and grated chocolate.
