Fried Catfish with Cajun Spice

   I like to soak the catfish in beer for 30-60 minutes before cooking, but its not necessary.

   When you are ready, preheat oil in deep fryer or skillet.

   In a large plastic bag, combine cornmeal, flour and Cajun spice, mixing well.

   Add fish nuggets and toss until fish is well coated.

   When oil has reached the proper temperature (375 F), add 10-12 pieces of fish at a time.

   Cook for 3-4 minutes until they are a deep golden brown.

   Remove the fried fish from the oil using a slotted spoon and set on a paper towel lined plate.

   Repeat with the remaining fish.

    Cajun Spice recipe: Combine brown sugar, chili powder, garlic powder, onion powder, seasoned salt, paprika, cayenne pepper, salt and pepper.
