Name: Fresh Apple Cake

Ingredients: 1 1/3 c. plain flour; 1 c. whole wheat flour; 2 c. sugar; 2 tsp. baking soda; 3/4 tsp. salt; 1 tsp. cinnamon; 1/4 tsp. each: ground cloves and nutmeg; 4 c. finely chopped apples, peeled (add sugar if tart); 1/2 c. soft shortening; 2 eggs

Combine flour, sugar, salt and spices.

Mix until blended.

Add apples, shortening and eggs.

Beat at medium speed until well blended.

Pour into a greased and floured 9 x 13-inch pan or 2 layer cake pans.

Bake in preheated oven at 325u00b0 for 45 minutes or until cake springs back when touched.

The cake does not rise much like a fruit cake.
