French Onion Soup

   Gently cook onions and butter in a large pan for about 30 minutes, stirring occasionally making sure they do not burn.

   The onions should be soft and a rich golden colour.

   Sprinkle in flour, stir well then add stock.

   Stir until boiling, lower the heat and simmer gently for about 20 minutes.

   Place bread slices on a baking tray, bake in a moderate oven for about 10 minutes or until crisp.

   Season soup to taste with salt and black pepper and pour into a soup tureen or into indivual bowls.

   Top with bread slices, sprinkle with cheese and bake a further 10 minutes in a moderate oven.
