Ingredients: 1 c. bean mix; water; 1 1/2 tsp. salt; ham pieces; 1 bay leaf; thyme; 1 pt. tomatoes; 1 medium onion, chopped; 1 whole clove; 1 clove garlic, finely chopped; 1/2 chopped green pepper; salt and pepper; 1 1/2 lb. smoked sausage; uncooked chicken; parsley

Servings: persons

1 c. bean mix
water
1 1/2 tsp. salt
ham pieces
1 bay leaf
thyme
1 pt. tomatoes
1 medium onion, chopped
1 whole clove
1 clove garlic, finely chopped
1/2 chopped green pepper
salt and pepper
1 1/2 lb. smoked sausage
uncooked chicken
parsley

Wash bean mix; drain.

Add water to cover and salt; soak overnight.

Drain and add 1 1/2 quarts of water, some ham pieces, bay leaf and pinch of thyme.

Simmer 3 hours, covered.

Add tomatoes, onion, clove, garlic, green pepper and salt and pepper to taste.

Also add smoked sausage, cut in thick slices, and several pieces of uncooked chicken.

Simmer until chicken is tender. Remove meat from bone and cut chicken into small pieces, then return to soup.

Ten minutes before serving, add chopped parsley, either fresh or dried.
