Ingredients: 1 lb Italian sausage, casing removed & crumbled; 2 garlic cloves, chopped; 1 onion, chopped; ½ cup mushroom, chopped (optional, or peppers); 1 (19 ounce) can tomatoes, drained & chopped; 1 (6 ounce) can tomato paste; 1 tablespoon dried basil; ½ teaspoon ground oregano; ½ teaspoon black pepper; 1 loaf French bread, unsliced (or 8 individual dinner rolls); 7 ounces mozzarella cheese, shredded; 4 ounces cheddar cheese, grated

1 lb Italian sausage, casing removed & crumbled
2 garlic cloves, chopped
1 onion, chopped
½ cup mushroom, chopped (optional, or peppers)
1 (19 ounce) can tomatoes, drained & chopped
1 (6 ounce) can tomato paste
1 tablespoon dried basil
½ teaspoon ground oregano
½ teaspoon black pepper
1 loaf French bread, unsliced (or 8 individual dinner rolls)
7 ounces mozzarella cheese, shredded
4 ounces cheddar cheese, grated

Preheat oven to 300F

In skillet, over medium heat, brown sausages.

Remove with slotted spoon, set aside & keep warm; drain excess fat.

Saute garlic & onion 2 3 mins, until soft.

Add tomatoes, tomato paste, basil, oregano & pepper.

Simmer for 15 mins, stirring occasionally.

Slice off the top of the loaf of bread (or rolls) lengthwise.

Scoop out the centre of the loaf leaving a 1 shell.

Spread 1/2 of the tomato mixture into the hollowed loaf.

Layer the sausage over the tomatoes.

Top with remaining tomato mixture.

Sprinkle the mozza & cheddar cheese on top & replace the top of the loaf.

Double wrap loaf in heavy aluminum foil & place on a cookie sheet.

Bake for 1 1/2 hrs (or 1 hr for dinner rolls).

Remove from oven & let set for 20 minutes.

To serve, cut loaf into 2 slices.
