Fluffster's Sweet Potatoes Anna

   Preheat oven to 425F.

   Coat bottom of shallow 1 1/2 quart round baking dish or 9-inch pie plate with 1 tablespoons butter.

   Thinly slice sweet potatoes.

   Overlap slices in a single layer in bottom of a prepared dish.

   Sprinkle 1 tablespoons cheese on top.

   Drizzle 1 tablespoons butter over top.

   Season with salt and pepper to taste.

   Repeat layering until all ingredients have been used, shaking dish occasionally to prevent sticking.

   Drizzle any remaining butter over top.

    Cover pan with foil.

    Press down to compact the sweet potatoes.

    Place heavy skillet on top of foil.

    Bake on lowest oven rack for 30 minutes.

    Remove skillet and foil.

    Bake for 45 minutes, or until browned and crisp on top and edges.

    Let stand for 5 minutes.

    Holding sweet potatoes in dish with a large spatula, drain off any excess butter.

    Loosen potatoes around edges with a small spatula.

    Invert onto a serving plate.
