In a pot of boiling water add whole russet potatoes and boil until fork tender (cook time will vary but for large potatoes, they will need to boil for around 25-35 minutes). Remove potatoes from the water with a kitchen spider and place potatoes on a clean work surface and allow them to cool.

In a large frying pan add butter, olive oil and canola oil and allow them to melt together on low heat. Slice onion thinly, separate slices and add them into the greased frying or griddle pan. Add paprika, salt and black pepper, and stir.

Peel the cooled potatoes and cut them into cubes (cut potato lengthwise in quarters then cut into bite-sized cubes). Add potatoes to the pan and stir. Increase heat to medium high, allow the mixture to brown on the first side then flip the mixture and brown the other side. Serve piping hot!
