1) Put the butter in the freezer for 5-10 minutes. (make sure it's not frozen but very cold and hard to the touch)

2) Combine flour, sugar and salt together in a large mixing bowl

3) Using a vegetable grater and grate the semi frozen butter into the flour. Every so often (use your fingers) lightly mix the flour and butter together.

4) When all the butter is grated, mix it around but make sure the butter is not melted, the flour should start to stick to the butter and clump up.

5) Slowly (1 TBSP at a time) add the chilled water and mix w/ your fingers until a ball forms.

6) On a floured clean surface, knead it a few times.

7) Divide the dough in half and place in plastic wrap. Refrigerate for at least one hour before you roll it out.
