   4 to five hours on hi cook low 30in remove plate slice thin and ready to serve as you would beef with main course or thin slices on cracker with sharp cedar and cherry tomatoes

   after cooking remove from heat peel allow to cool peel tongue and remove fatty parts from lower muscle , slice thinly may serve covered with a basic creamy tomato sauce
