Eggplant Pizza

   On a cookie sheet, place the slices of eggplant.

   Brush olive oil onto each slice and grill for 3 minutes on each side to give them good grill marks and flavor.

   In a saucepan, heat 1 Tbsp olive oil and saute onion and garlic until translucent

   Add pizza sauce to saucepan and bring to a boil.

   Remove from heat and spread hot sauce on each eggplant slice.

   Sprinkle with cheese and heat on medium heat on grill for 3 - 5 minutes or until cheese is melted and hot.
