Dissolve yeast in warm water.

Add 2 Tbs.

sugar and salt, dissolve.

Then lightly beat in the two eggs and stir well.

Add 4 cups of flour, stirring to make a smooth thin dough.

Lastly, add remainder of the flour to make a stiff dough.

Knead dough for 15 minutes and set aside to rise for 40 minutes.

Divide the risen dough into 20 equal parts and knead each separately to form a small ball.

Push a flowered finger through the middle of each ball (one at a time) of dough and twirl it around your finger to make a bagel circle with a 1 to 1 1/2 inch hole.

The outer diameter should be about 3 inches.

Let the bagels rise one more time for 20 minutes.

Bring 3 quarts of water to a boil and add 1 Tbs.

Drop 4 - 5 bagels (no more) and boil for 4 minutes, turning each carefully.

Remove with a slotted spoon and dry on a paper towel.

Mix the egg yolk with 1 Tbs.

Then brush with this mixture using a pastry brush.

Bake in a preheated 400 degree oven on a heavy cookie sheet for 20 to 30 minutes until golden brown.
