Preheat oven to 350u00b0F.

In a medium bowl, using a hand mixer on medium speed, lightly beat eggs for approximately 2 minutes. Add oil, sugar and yogurt; beat another 2 minutes until smooth. Add flour and baking powder and beat until well combined-you guessed it, about another 2 minutes.

Pour into greased 8-inch cake pan and bake 35-40 minutes or until tested done (when toothpick or knife inserted in cake comes out clean). When cool, top with powdered sugar or melted chocolate.

Note: For the melted chocolate topping, melt chocolate in a bowl over a pot of boiling water. When melted, pour chocolate in a plastic bag and pipe the chocolate (obviously not like a professional) over the cake. I wanted semi sweet chocolate but my youngest daughter wanted milk chocolate, so we compromised!
