Easy Toaster Oven Madeleine Cakes

   Combine the egg, sugar, olive oil, vanilla extract in a bowl and mix well.

   Stir in the pancake mix.

   Use 2 spoons to scoop the batter into small aluminum cups.

   Caution: They will rise so only fill the cups 60%.

   Bake them in a toaster-oven for 10 minutes at 1000 W. If they start to burn midway, cover with aluminum foil until done.

   You could also mix 1 teaspoon of lemon juice into half of the batter to make lemon madeleine cakes.
