Mix the graham cracker crumbs, sugar and melted butter and pack mixture firmly into bottom and sides of 9-inch pie pan. Chill in the refrigerator while preparing the filling.

Mix cream cheese, sugar, vanilla and lemon juice in a mixer. Add eggs one at a time to the mixture and thoroughly combine (you really can't overmix this). Pour into the chilled pie crust.

Bake for 10 minutes at 450 degrees (F). Then, reduce temperature to 200 degrees (F) and bake for additional 35-45 minutes (or until center is no longer jiggly).

Chill in the refrigerator before serving. Optional: top with cherry or strawberry pie filling.
