Easy Meat Loaf – a delicious recipe with bacon, onions, green pepper, celery, meat, tomato juice. Easy to follow and perfect for any occasion.

2 to 3 bacon slices
1 1/2 c. chopped onions
1 c. chopped green pepper
1/2 c. chopped celery
2 lb. meat (beef and pork)
1 c. tomato juice
1/2 c. evaporated milk
2 eggs, beaten
1/2 c. cracker crumbs
1 tsp. salt
black pepper to taste

Saute seasonings (bacon slices, onions, green pepper and celery).

Mix meat, tomato juice, milk, eggs, cracker crumbs, salt and black pepper.

Add browned seasonings to meat mixture and shape into a loaf.

Brush loaf with catsup and add 2 or 3 bay leaves on top.
