Slice the tomato thinly, and chill in the refrigerator.

Cut the daikon radish into short thick matchsticks, and sprinkle with salt.

Shred the shiso leaves and put into a bowl of water.

(If you're using basil, rip up the leaves with your hands.)

Squeeze out the daikon radish and shiso or basil leaves well using paper towels to remove any excess moisture, and put into a plastic bag.

Add enough soy sauce to coat the vegetables plus the garlic, and leave to rest in the refrigerator for at least 30 minutes.

Put the daikon radish and shiso leaves on top of the tomatoes from Step 3, pour the marinade over all.

Drizzle with sesame or olive oil and top with sesame seeds.
