Add in onions to roux and simmer about 5 min.

Okra should be simmered till no longer stringy - don't burn!

Add in roux, okra, onion, tomatoes and spices in large pot and add in 4-5 qts of water.

If you use the bag crab boil, be careful not to burst the bag and only leave it for about 1 hour.

Allow this to simmer about 2 hrs stirring sometimes (minimum 1 1/2 hrs).

After 1 1/2-2 hrs, add in the meat and allow to cook 30-45 min for seafood or possibly 1-1 1/2 hrs for chicken.
