Combine all of the dry ingredients and mix well. Coat the front and the back of the ribs with the rub and let sit, covered at room temperature for 1/2 hour.

Put the ribs on the grill bone side down and immediately lower the heat so the temperature is 250 degrees. Cook the ribs with the lid closed for 1 hour, turning once for the last 15 minutes of cooking.

Preheat the oven to 200 degrees. After an hour on the grill, put the ribs in the oven for one hour.
