Double-Baked Sweet Potatoes with Bacon and Cheese

   Heat oven to 400F.

   Prick potatoes in several places with fork.

   Bake 1 hour 15 min.

   or until tender.

   Cool slightly.

   Cut potatoes lengthwise in half; scoop out centres into medium bowl, leaving 1/4-inch-thick shells.

   Mash potato centres with cream cheese product until smooth.

   Stir in half the bacon.

   Spoon mashed potato mixture into potato shells; sprinkle with cheddar, then remaining bacon.

    Place on baking sheet.
