Mix sugar, syrup, salt and water in large heavy saucepan.

Cook over medium-high heat until a little dropped in cold water will snap apart.

Set syrup off heat.

Beat egg whites in a 4-quart bowl until stiff peaks form.

Pour syrup a little at a time in a thin stream into egg whites, beating all the time with the mixer.

When you have poured about half the syrup, you can then pour it directly out of the pan in a thin stream. When you have added all the syrup, continue beating until the candy is thick.

Add vanilla and food color and mix in.

Beat until it starts to hold its shape.

Add 1 1/2 cups walnuts.
