In a medium saucepan, combine sugar, syrup, water and salt. Without stirring, cook over low heat until temperature on candy thermometer reaches 265u00b0 (approximately 10 to 15 minutes) or until a small amount of mixture dropped into very cold water forms a soft ball that will not flatten when pressed between finger and thumb.

Just before temperature reaches 265u00b0, in a large bowl with mixer at high speed, beat egg whites until stiff peaks form. Slowly pour in hot mixture a little at a time, beating at high speed until mixture begins to lose its gloss.

Reduce mixer speed to low.

Add vanilla and nuts and using a spoon, stir until candy holds its' shape when dropped from a spoon.

Drop by spoonful onto wax paper or foil to cool.

Store in covered container.
