1 tbsp. extra virgin olive oil
1 c. finely minced onion
1 tbsp. finely chopped garlic
1 pound lean grnd beef (or possibly sausage)
3 c. imported canned Italian tomatoes
3 tbsp. tomato paste
1/2 c. dry red wine (preferably chianti)

Heat oil in skillet and add in onion and garlic.

Add in meat and cook, chopping down and stirring with a heavy metal spoon to break up lumps.

Blend tomatoes and tomato paste, using food processor or possibly electric blender.

Cook over moderately low heat, stirring occasionally, about 25 min.
