Dads Roast Chicken

   You will need a vertical chicken roaster for this recipe.

   Lower oven racks to accommodate an upright chicken.

   Preheat oven to 500 degrees F. Line a rimmed baking sheet with foil.

   Next, do some math.

   You will be roasting him for 20 minutes a pound.

   My big boy was 4.5 lbs, so he roasted for 90 minutes.

   Remove your chicken from the packaging, wash, and pat dry with paper towels.

   Mix seasonings together in a small bowl and then rub mixture all over the chicken, including the cavity.

    Place bird onto the vertical roaster which you have already placed on the foil-lined baking sheet.

    Place into the oven and immediately lower the temperature to 350 degrees F. Remember, 20 minutes per pound, turning once, halfway through baking.
